Fukuoka city. Home of the hakata ramen which I so love! I remember my first encounter with tonkotsu ramen. It was heavenly. All other forms of ramen paled in comparison when I dug into my first bowl of rich, flavourful pork bone broth noodles topped with char siew and other edible decorations, ie. bamboo shoots and spring onions. That was Ippudo. This former port city in Fukuoka prefecture is also famous for its offal hotpot - Motsunabe (もつ鍋) in Japanese. But no, thank you. I do not normally consume innards unless the people I'm with decide to go for it ...like, I won't eat kway chap (which has pig's innards) if I'm alone; it's a dish that's meant to be shared, IMO. We spent most of our time in Fukuoka city on checking out the shopping malls and at the same time, did a little retail therapy.
